1/4 Beef (85-130 lbs. Hanging Weight)

This quarter beef will have a hanging weight of at least 80 lbs. The take home weight will likely range somewhere between 55 and 75 lbs. depending on the characteristics of the animal and the choices you make with your cut requests. This beef is grass-fed for the majority of it's life and supplemented with a grain for the last 90 days.

The one-half cow cuts of beef typically include the following:

  • Rib Eye Steak (~6-8 x 1" steaks)
  • New York Steak (~6-8 x 1" steaks
  • Sirloin Steak (~2-3 x 1-1/4" steaks)
  • Round Steak (~4 x 1/2" steaks)

  • Rump Roast (~1-2 x 3 lb roasts)
  • Stew Meat (~2-4 lbs)
  • Short Ribs (~4 x 2 pieces)
  • Ground Beef (~20 x 1 lb packages)
  • Chili Meat (~3 x 1 lb packages)
